What?? Bethany is blogging?? Hahaha! Yep! I am! So happy it is the weekend! Finally at the end of all my homework that had to be done today. And I may or may not be on my 3rd cup of coffee this evening. :-D It has been a crazy busy week of school and work and on top of that we had Evangelist Rich Tozour and his family to our church for a week of meetings. Myself and a couple of my friends had the privilege of preparing brunch for their family yesterday morning. We had a blast doing it and the food was a hit! We had fruit, bacon, and my personal favorite, Stuffed French Toast topped with cooked apples. The French Toast was a hit and I was asked by a few people to share the recipe. I have a slight confession. The recipe that I used is kind of a combination of different parts of different recipes that I thought might go good together. (I can't ever leave a recipe alone.) I also didn't really measure so I'm going to guess at measurements and hopefully it is about right. Now that the disclaimer is done...Here's the recipe for the french toast with the topping! Apple Topping Ingredients. 2 Apples (pealed and cut into small chunks) 3/4 cup of brown sugar. 4 tbs of butter (about) you can add more or less...I'm not sure how much I used) 1/2 tsp of vanilla 1 tsp of cinnamon Directions: Real simple! Dump everything into a pot and heat her up! Stir occasionally until butter is completely melted in with the brown sugar. Put a lid on it and let the apples cook down. Continue to check on them every so often. I'm not sure how long I cooked them for. When the apples are soft, it is done. If you want the brown sugar and butter to be a little more thick, let it cook a little longer. (small recommendation: If you are planning to make everything...ie. the Stuffed French toast and apple topping, I suggest starting with the topping so that it has time to cook down before the French toast is ready. It's always better served hot, you know! :-D) Stuffing Ingredients: 8 oz. package of room temperature cream cheese 4 tbs of sugar. Directions. Blend together with mixer until completely smooth. French Toast Ingredients 1 Italian loaf. (It is best to get one that Has a soft exterior instead of a hard crust. This will Allow the bread to soak up the egg mixture, and also it will be easier to stuff) 6 eggs 1 1/2 cups of milk 1 tsp of vanilla 1/4 tsp of Almond Extract 2 tsp of Cinnamon Directions: Slice loaf into about 1 & 1/2 to 2 inches thick. cut a slit into the middle of those slices almost all the way to the bottom of the slice. You will want to leave the bottom still connected so that the toast is easier to flip in the pan. Take your cream cheese filling and put the desired amount into the center of the bread being careful not to tear the bottom of the bread. Next, in a bowl beat together the 6 eggs, milk, vanilla, almond extract and cinnamon. Get out a frying pan and heat up over medium heat. Add butter to the pan and when the surface of the pan is evenly coated in butter, quickly dip the slices of bread into the egg mixture and then place into the frying pan. Watch the bread closely. (I don't have an exact time of how long for each side. It really just depends on how hot the pan is.) Continue this process until all the toast is done, adding butter at each time you add a piece of toast. Main thing is to keep the bottom of your pan a little buttery so that your toast doesn't scorch or stick to the pan. Tips: Often times when you are cooking several sets of toast, the butter will start to burn. If the bottom of your pan starts to get a dark brown color to it, you are going to want to wash and start fresh. This will prevent your toast from having a burnt taste and will allow your toast to get the perfect amount of browning!) When you get done cooking one batch, place the it on a plate and cover with a bowl or aluminum foil insure that it all stays warm while you finish cooking the rest of the toast. When all the toast is finished, sprinkle some powdered sugar over top (just for the look) trust me, it is plenty sweet without it! ;-D Enjoy!!
