This past Sunday we hosted a baby shower at our house. One of my family members had made a cake on Saturday night (the time when we were all pretty worn out from cleaning and cooking.) The intent was to make a banana chocolate chip cake but she forgot to put the bananas in. The cake didn't quite taste right and we didn't want to serve it the way it was. We were brain storming to try and figure out what to do with it and my sister Grace came up with the idea of making a Trifle. I jumped on that idea and sence we were in a time crunch I didn't want to look for a recipe so I just made one up. It ended up being a hit and several people said "I hope you wrote the recipe down." I hadn't written it down, but here is the recipe (or at least as much as I can remember it.) :-) Wish I had pictures of the final product but because of the lack of time, I couldn't take any pictures.
INGREDIENTS 1 banana chocolate chip cake (with out the bananas) :-D 1 1/2 carton Whipping Cream 3/4 cup Powdered Sugar 1 package Cream Cheese 1 can Sweetened Condensed Milk 1 to 2 tbs Milk 1/3 to 1/2 cup Cocoa Powder 2 cups Chocolate Chips INSTRUCTIONS Make whipped cream by beating the powdered sugar in to the whipping cream. (Beat for about 5 minutes.) Set aside. In another bowl, combine Cream Cheese, Sweetened Condensed Milk, milk, and Cocoa Powder. Mix until smooth. Cut cake in to 1 inch cubes. Place half of the cake in the bottom of your Trifle glass or bowl. Next layer half of your chocolate mixture, whipped cream, and chocolate chips. Repeat the steps using the rest of the ingredients. Enjoy!

Yes I know I'm a few days late, but my weekend was EXTREMELY busy! So Happy belated Valentine's Day! This year my sisters and I and several young ladies from church had a girls movie night. It was so much fun just to relax, eat good food, have good fellowship, and watch movies. I didn't get very many pictures but I did get a picture of some of the food! The menu was spaghetti, garlic bread, salad, and lots of different desserts! The day after Valentine's Day I got home and made some sugar cookies for a baby shower that we had on Sunday (I told you I had a busy weekend!) The cookies turned out great! I love the recipe so I thought I would share it with you! Soft Sugar Cookies
INGREDIENTS 3 cups All-purpose Flour 1 tsp Baking Powder 1/2 tsp Salt 1 cup Butter (softened) 1 1/2 cups White Sugar 2 Eggs 2 tsp Vanilla Extract INSTRUCTIONS Mix all dry ingredients together. Add the softened butter it is thoroughly combined. (The consistency should be a little like corn meal.) Then add your eggs and Vanilla Extract. Let sit in the the frig for about 20 to 30 minutes. Role out on parchment paper. Make sure to flower your rolling pin and put powdered sugar down on your parchment paper. Role out to about 1/4 inch in thickness. Cut the desired shapes and place them on a greased cookie sheet. Bake at 350 for about 10 minutes. Let cool on pan for 3 to 4 minutes before removing to a wire rack. ICING 1 cup Powdered Sugar 2 tsp Corn Syrup 2 tsp Milk 1/2 tsp Vanilla Extract INSTRUCTIONS Mix all ingredients together then add milk or corn syrup until you reach the desired consistency. For the coloring I used a little bit of Jello mix. I personally don't like the taste of food coloring, and the Jello gives it a nice flavor as well as a great color! The past couple of days my dad has been working on making DIY lotion! He just finished it this after noon! The house has been smelling like lavender and chamomile with a hint of coconut oil!
Cold weather always gets me looking for new recipes for hot drinks to try! I ran across a recipe for Brazilian Coffee! This morning I woke up and the temperature was quite chilly so I figured it was the perfect morning to try it out! It was so yummy!!! Here is the recipe so you also can enjoy!
Brazilian Coffee 1/3 cup Unsweetened cocoa 1 tsp. Salt 1 tsp. Cinnamon 1 can Eagle Brand Sweetened Condensed Mild (14 Ounces) 5 cups Water 1 1/3 cup(s) Strong Brewed Coffee. 1. Combine cocoa, salt and cinnamon in 3-quart saucepan. Add Sweetened Condensed Milk: Mix well 2. Slowly stir in water and coffee over medium heat; heat thoroughly but do not boil. 3. Brazilian coffee may be stored in refrigerator up to 5 days. Mix well and reheat before serving. (I added extra coffee because it was a touch too sweet for me) Enjoy! This afternoon I was in a bit of a cooking mood so I made so Mini Lemon Poppy Seed Muffins (got the recipe off of pinterest). They smelled so good when they were baking! Here is the recipe!
Mini Lemon Poppy Seed Muffins 3/4 c. + 2 tbsp flour 1/4 c. + 2 tbsp sugar 1 1/4 tsp baking powder 1/8 tsp salt 1 1/2 tsp poppy seeds 1 egg white 1/4 c. + 2 tbsp plain nonfat Greek yogurt 1/4 c. water 2 tbsp vegetable oil zest from q small lemon juice from half of 1 small lemon 2 tsp sugar 1. Preheat oven to 375 degrees and line 24 mini muffin cups with paper liners. (If you don't have mini muffin cups, you can just grease and flower your pan.) 2. In a large bowl, whisk together the flower and next four ingredients (through poppy seeds). In a medium bowl, whisk the egg white, and stir in the next five ingredients (through lemon juice). Make a well in the center of the dry ingredients, and pour the wet ingredients in, stirring just until moist. 3. Lightly mist the paper liners with nonstick cooking spray. Evenly divide the batter between the muffin cups, and sprinkle with the remaining 2 teaspoons of sugar. Bake for 11-13 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 5 minutes before turning out onto a wire rack to cool completely. Enjoy!! |
