Alright y'all! I have found a new favorite meal! Yep you read it right. It's Mexican Spaghetti.
*disclaimer. I did find a basic recipe on Pinterest. However, you know me...I didn't follow it...but it was a good springboard for my own idea to form! Also I don't have any pictures because it got eaten before I could get any. So if this is something that sounds good to you, just go for it! Here's the recipe! Ingredients: 1 pound Ground Beef (Or you can substitute Turkey or Chicken...Which ever you prefer) 2 tsp Chili Powder 2 tsp Chili Flakes 1 /12 tsp of Salt 1 tsp Pepper (basically what ever taco seasonings you like to use when you are making tacos) I'm pretty sure I threw in a couple of other things but I don't remember what all I put. But this is the basics. 1 can of Rotel 2 tbsp of Salsa 3 cups of water 8oz of spaghetti noodles. 1 cup of cheese. (I used Mexican blind but you can use whatever kind of cheese you would like!) Instructions: Brown your beef(or whatever meat you are using.) Drain off the fat then add all your spices. If you have a dutch oven you can cook it all in one pot. I didn't, so after adding the spices to the meat, I transferred it to a standard pot. To the pot with the seasoned beef, add the rest of the ingredients except the cheese. And yes. Add the noodles uncooked. Bring it to a boil over high heat then turn it down, cover it, and let it simmer for about 15-17 minutes. At the end of the simmer time put the cheese on top. (After the spaghetti was cooked I transferred it back into the frying pan so I could get a more even distribution of cheese.) Put the lid back on and let it sit long enough for the cheese to melt. Top it with some fresh cilantro and you've got a pretty fabulous plate of food! Leave me a comment if you try it and like it! :-D Have a great weekend!

Yep. That heading says Orange Pie! The 'Grannah's' Is a story on it's own...but in short, that's just what we decided to name it! About a year ago, a friend of mine and I were hanging out and doing some cooking. That day we made a lemon pie. (Which happens to be one of my favorites.) We were sitting there enjoying our creation when suddenly the thought hit me. 'I wonder what it would be like to make an orange pie instead of lemon?!?!' I mentioned it to my friend and she, being a person who is always ready to try and make something knew, lit up like a Christmas tree and was like 'Oh my word! We've got to try that!' Right then and there we decided that one day we would make it happen! So now, a year later, we finally got around to trying it! A few things that might come to your mind when I say Orange Pie are; yuck, gross, weird, interesting, you're crazy....etc. This is the reaction we got while we were making it. :-) But despite all the comments and weird looks, we came up with a recipe and it turned out pretty tasty! In other words, never shoot down an idea before you try it! So, If you want to try it, here's our recipe. (Some of the measurements aren't exact...we were basically making it up as we went...) In other words, just eyeball it and use your best judgement. I did try to get as close to what I think we did!
Orange Curd Topping: 1/3 cup Sugar 2 1/2 tsp. Corn Starch 1/4 cup Water 1/2 cup Fresh squeezed Orange Juice 1 Egg Yolk 1 tbsp of Butter. Pie Filling: 2 packages Cream Cheese. 1/2 cup Sugar 1 cup fresh squeezed Orange Juice 1 tbsp Orange Zest 1/2 cup Plain or Vanilla Yogurt 2 tsp of Lemon Juice Pie Crust: So you can either use a pre-made graham cracker crust, or, you could make your own using the recipe that I use for my Cheesecake recipe. The only difference is that you are going to use about 2 tbs more of butter and once you've got it in your pie pan, stick it in the oven for a good 10 minutes at 350. (We made individual pies just because we already had the little mini crusts so we decided to go ahead and use them.) Instructions: Orange Curd - Grab a sauce pan and combine all the ingredients except the butter. Cook over medium heat, stirring continuously until it gets to a thick consistency. Remove it form the heat and as it cools, stir in the butter. Once the butter is complete melted, pop it in the fridge for a quick cool down. This can also be done in the microwave by heating it one minute at a time. Just be sure not to over cook it! Filling - Literally just dump everything together and beat it together! Yep it's that simple! Transfer the mixture to your pie crust. Drizzle the curd, or completely cover the top of the pie. (Which ever you like. We tried some of both. Personally, I like the pie completely covered in the curd. We topped ours with slices of Oranges. There are two ways of serving it! You could either freeze it, or you could just let it chill in the fridge. Both ways are really good! So if you try it, be sure to comment and tell me how yours turned out! |
